Chocolate Chip Banana Cake

Servings: 15
Comments:
A cake so delicious and moist, it needs no frosting.

Ingredients:
3 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 cups granulated sugar
1/2 cup (1 stick/4 oz/113g) butter, softened
2 large eggs
1 cup sour cream
2 medium (1 cup) ripe bananas, mashed
1 teaspoon vanilla extract
1 1/2 cups miniature semi-sweet chocolate chips

Instructions:
1. Preheat oven to 350°F (180°C or Gas Mark 4).

Stir together flour, baking powder, baking soda and salt in medium bowl; set aside.

2. Combine sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (2 to 3 minutes). Continue beating, adding eggs one at a time, until well mixed (1 to 2 minutes). Add sour cream, bananas and vanilla; continue beating until well mixed (1 minute).

3. Reduce speed to low. Continue beating, gradually adding flour mixture and scraping bowl often, until well mixed (1 minute). Gently stir in 1 cup chocolate chips by hand.

4. Pour batter into greased 13 x 9-inch baking pan. Sprinkle remaining chocolate chips over batter. Bake for 40 to 45 minutes or until toothpick inserted in center comes out clean.

Makes 15 servings.
