Simple Syrup II

Servings: Makes 1 1/4 cups
Comments:
Here is another basic "simple syrup" recipe for your "genoise cakes", and for many other types of cakes.

Ingredients:
1/4 cup boiling water
3/4 cup sugar
1/2 cup cold water
1 tsp. lemon juice
1/8 tsp. vanilla extract*

Instructions:
In a small pot, bring to a boil 1/4 cup water, set over high heat. Add
in the sugar and boil until the sugar has dissolved, stirring occasionally.
Remove from heat and add in 1/2 cup cold water; stir to combine. Add
in the lemon juice and vanilla. Let cool.

*Note: You can also use, instead of vanilla: Kirsch, orange liqueur, brandy,
strong brewed coffee, rum, almond, or any favorite extract, to flavor
the syrup.
