Orange Chocolate Biscuits

Servings: Makes approximately 30 biscuits (cookies)
Ingredients:
5 oz. unsalted butter
6 oz. light brown sugar
6 oz. all-purpose flour
2 teaspoons baking powder
3 oz. bittersweet chocolate, chopped
Grated zest of 2 oranges
1 tablespoon orange juice
Light brown sugar, for garnish


Instructions:
Preheat the oven to 350 degrees F (180 C) and grease 2 cookie sheets.

Cream the butter and sugar together until they are pale and fluffy. Carefully mix in the flour and baking powder. Add the rest of the ingredients until you have a smooth, stiff paste.

Roll out the paste to 1/4 inch thick on a lightly-floured working surface. Using a 2 inch cookie cutter, cut out the rounds and place on the baking sheet. Sprinkle the cookies with a little additional sugar.

Bake in preheated oven for about 12-15 minutes until the cookies are a light golden brown. Keep an eye on the cookies while they are cooking, they need to be taken out when still soft, but will harden as they cool.

Remove from the oven and leave to cool for at least five minutes to allow the cookies to firm up before transferring to a cooling rack. Store in an airtight container. Makes approximately 30 biscuits.

These cookies are great with vanilla ice cream.
