Banana Nut Chocolate Chip Cookies

Servings: Makes 3 dozen cookies

These soft, cake-like cookies are delicious anytime of the year, but are especially good during the autumn and winter seasons when the weather is chilly. Serve them with a big mug of hot chocolate or a nice hot cup of coffee for a special treat.


Ingredients:
1/3 cup (2 1/2 oz./75g) butter, softened
1/2 cup granulated sugar
1 egg
1/2 cup mashed ripe banana (approximately 1 large banana)
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1 cup (6 ounces/170 grams) semisweet or white chocolate chips
1/2 cup (2 ounces/56 grams) chopped nuts, (such as walnuts, pecans or any nuts of your choice)


Instructions:
Preheat oven to 350 degrees F/180 degrees C. Spray 2 baking sheets with nonstick cooking spray.

In a small mixing bowl, cream butter and sugar. Beat in the egg, banana and vanilla. Combine the flour, baking powder, salt and baking soda; gradually add to creamed mixture. Stir in chocolate chips and chopped nuts.

Drop by tablespoonfuls 2 inches apart onto prepared baking sheets. Bake in preheated oven for 9-11 minutes or until edges are lightly browned. Remove to wire racks.

Makes 3 dozen cookies.
