Apple Butter Cake

With just the right blend of spices and apple butter, this apple butter cake will become a family favorite.


Ingredients:
For Cake:
1 cup vegetable oil
1 3/4 cups granulated sugar
3 large eggs
1 tbsp. vanilla extract
3 tablespoons orange juice
1 tablespoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
3 cups all-purpose flour
1/3 cup apple butter (store-bought or homemade)
2 1/2 - 3 cups apples, peeled and chopped
1 cup chopped walnuts

For Glaze:
1 cup confectioners' sugar
2-3 tablespoons apple butter (store-bought or homemade)

Serve with:
Whipped Cream or non-dairy whipped topping (thawed), or vanilla ice cream


Instructions:
Preheat oven to 350ºF/180ºC. Grease and flour a 9 or 10-inch bundt pan.

With an electric mixer beat vegetable oil and sugar together. Add eggs one at a time. Sift together dry ingredients and blend into egg mixture. By hand, stir in vanilla, orange juice, apple butter, apples and walnuts. Stir until well combined.

Pour batter into prepared bundt pan. Bake in preheated oven for 65 to 75 minutes or until cake tests done by inserting a cake tester or wooden skewer into cake and comes out clean. Remove from oven and let cool 10-15 minutes on a wire rack. Then invert cake and remove from pan onto a serving plate.

Glaze:
Prepare glaze by combining apple butter and confectioners' sugar. Pour over top of cake.

Serve slices of cake topped with whipped cream, non-dairy whipped topping or serve with vanilla ice cream on the side, if desired.

Makes 12-16 servings.
