Mango Cream

This Mango Cream is a very quick and easy dessert to put together for a dessert when you're running short on time and need something light and refreshing for your family or guests to serve after dinner, during the summertime.

1 1/2 cups chopped ripe mango (about 2 mangoes)
1/4 cup orange juice
1 tablespoon lemon juice
1/3 cup confectioners' sugar
Dash of salt
1 cup whipping cream, whipped

Garnish (optional)
Mango slices
Mint sprigs

Put chopped mangoes, orange and lemon juices, sugar, and salt in blender. Process until smooth. Fold into the whipped cream. Pour into individual serving dishes. Chill. Garnish with sliced mangoes and sprigs of mint, if desired.

Makes 4 servings.
