Chocolate Marble Cake

A lovely cake to serve anytime of year or for a special occasion and also lovely to serve at an afternoon tea or brunch.


Ingredients:
2/3 cup (1 1/2 sticks/6 oz/170 g) unsalted butter or margarine
2 cups granulated sugar
4 eggs, well beaten
3 cups all-purpose flour
4 tsp. baking powder
1/2 tsp. salt
1 cup milk
1 oz. unsweetened chocolate, melted
1 tsp. vanilla extract


Instructions:
Preheat oven to 350 degrees F (180 C). Grease a 10-inch bundt or tube pan.

Cream butter and sugar until light and fluffy. Add eggs and mix well. Sift flour, baking powder and salt and add to creamed mixture alternately with milk. Put 1/3 of the batter into a bowl and add melted chocolate. Add vanilla to the remaining plain batter. Drop plain batter, then chocolate batter by spoonfuls into prepared cake pan. Bake in preheated 350 degree F (180 C) for 1 hour. Cool for 1 hour before removing from pan. Dust top with confectioners' sugar if desired.

Makes 12 servings.
