Easy Frosted Banana Cake

Ingredients:
Cake:
3 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
3/4 cup chopped nuts (I recommend walnuts or pecans)
2 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 1/2 cups milk
1 cup mashed ripe banana (2 small or 3 medium bananas)
2/3 cup butter or stick margarine, melted (approximately 150g or 5oz. or 10 to 11 tbsp.)
2 tbsp. lemon juice
2 tsp. vanilla extract

Cream Cheese Frosting:
2 (8 ounce packages) cream cheese or reduced-fat cream cheese, softened
4 cups confectioners' sugar
2 tbsp. stick margarine
1 tsp. vanilla extract


Instructions:
1). Preheat oven to 350°F (180°C). Grease a 9 x 13-inch rectangular baking pan.

2). In a large mixing bowl combine flour, sugar, chopped nuts, baking soda, salt and cinnamon. Add milk, banana, melted margarine, lemon juice and the vanilla. Stir until smooth.

3). Pour batter into prepared baking pan. Bake in preheated oven for 30 minutes or until done. Cool 10 minutes. Remove from pan; cool.

Cream Cheese Frosting:
Combine cream cheese, confectioners' sugar, margarine and the 1 tsp. vanilla. Beat until smooth. Frost top and sides of cake. Store in refrigerator.

Makes 24 servings.
