7-Up Banana Bread

Servings: Makes 2 loaves, 10 slices per loaf

This is a very good recipe. The 7-UP makes it fluffy and light.

Ingredients:
4 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
1 cup butter, softened
2 cups sugar
4 eggs
2 teaspoons vanilla
2 cups mashed bananas
1 cup 7-UP

Instructions:
Preheat oven to 350 degrees F.

Stir together dry ingerdients and set aside.

Cream butter and sugar in a large bowl. Add eggs, beating well after each addition. Add vanilla and bananas, mixing well. Add dry ingredients alternating with the 7-UP, finishing with the dry ingredients.

Pour into 2 greased loaf pans. Bake for 45 minutes, until a toothpick inserted in the center comes out clean.

Cool in pans for 10 minutes before removing and cooling completely. Makes 2 loaves, 10 slices per loaf.
