Healthy Whole Grain Pancakes

Servings: Makes approximately 12 pancakes
 
Ingredients:
1/2 cup whole-wheat flour
1/4 cup rolled oats
1/2 tablespoon wheat germ
2 teaspoons baking powder
Pinch of salt
1/2 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice
1 large egg white
3/4 cup skim milk
3 tablespoons canola oil
1/2 cup water (if needed)
1/2 cup dark chocolate chips
1-2 bananas, sliced (optional)

Instructions:
In a small bowl, whisk together flour, oats, wheat germ, baking powder, salt, cinnamon, and pumpkin pie spice. In a medium bowl, mix the egg, milk, and oil. Stir the dry ingredients into the wet ingredients to form a batter. Add the water gradually (as needed). Don't overwork the batter. Stir in the dark chocolate chips.

Bake on a hot, greased griddle. Spoon about 1/4 cupful of batter onto the griddle. Cook until edges are dry then flip and cook until golden. Serve hot with banana slices and light maple syrup.

Makes approximately 12 pancakes.

I think there must be a mistake here. Made the batter per recipe and was like water. Hmmm... had to add another 1/2 of flour and still was thin.
