Bread Machine Australian Damper Bread

This bread is rich and dense, and I find it especially nice with soups and salads. It's also yeast-free for those who do need to avoid yeast, and you won't miss it in the least.

The recipe is for a 1 1/2 pound loaf (don't worry about the large amount of flour, because it is yeast-free it won't rise as much as a yeast loaf), but I've included the ingredient amounts for a 1 pound loaf at the bottom. If you decide to make a 1 pound loaf in the oven, check the baking time a bit earlier.

You can also make it on the dough cycle, shape it into a round loaf, and bake in a 350 degree F/180 degree C oven for about 25-30 minutes, or until it sounds hollow when tapped.

Ingredients:
2 tablespoons plus 2 teaspoons vegetable or canola oil
1 2/3 cups water
4 3/8 cups bread flour *(see note)
8 teaspoons powdered milk
1 teaspoon salt
4 teaspoons granulated sugar
4 teaspoons baking powder

Instructions:
Add ingredients in the order specified by your bread machine manufacturer.

If you have a quick bread or cake setting, use that. Otherwise, use the dough setting and bake for about 25-30 minutes in a pre-heated 350 degree F/180 degree C oven.

NOTES:
I have used plain unbleached flour, with and without wheat gluten, and have gotten consistent excellent results every time.

Amounts for a 1 Pound Loaf:

2 tbsp. oil
1 cup water
3 1/4 cups flour
2 tbsp. powdered milk
3/4 tsp. salt
1 tbs. granulated sugar
1 tbs. baking powder

Makes 1 loaf (12 servings).
