Diana's Buttery Oatmeal Cookies

These lovely oatmeal cookies are wonderful with coffee or tea, or with a big glass of milk. They are thin and a bit crispy, and make a great snack anytime of the day or evening. They are one of my favorite cookies, so buttery and light.....Diana

Ingredients:
1 3/4 cups old-fashioned rolled oats
3/4 cup all-purpose flour
3/4 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1 1/4 sticks (5 oz/140g/5/8 cup) unsalted butter, softened
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 large egg
1/2 tsp. vanilla extract

Instructions:
Time To Prepare: 25 Minutes
Time To Bake: 12 Minutes

Preheat oven to 375 degrees F (190 C). Grease 2 baking sheets with Crisco or lard (solid shortening).

Sift together oats, flour, cinnamon, baking soda, and salt.

With an electric mixer, beat together softened butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla and beat until well combined. Add oat mixture and beat until just combined.

Drop dough by heaping tablespoons 2inches apart onto baking sheets and flatten mounds slightly with moistened fingers.

Bake cookies in upper and lower thirds of oven, switching position of sheets halfway through baking, until golden, about 12 minutes total. Transfer to racks to cool.

Makes 2 dozen cookies.

I've been using this recipe as my favorite and go-to recipe whenever I want to bake oat cookies. It's the BEST! Very flavorful and crisp.
