Ingredients: 1 1/4 cups granulated sugar 3/4 cup (1 1/2 sticks/6oz/170g) butter, softened 1 egg 1 teaspoon vanilla extract 1 3/4 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 48 mint meltaway candies |
Instructions: Combine 1 cup sugar, butter, egg and vanilla in large bowl. Beat at medium speed until well mixed. Reduce speed to low; add flour, baking soda and salt. Beat until well mixed. Cover; refrigerate until firm (30 minutes). Heat oven to 375 degrees F/190 degrees C. Shape dough into 1-inch balls; roll in remaining sugar. Place 2 inches apart onto ungreased cookie sheets. Bake for 7 to 9 minutes or until very light golden brown. Remove from oven; immediately press 1 mint candy in center of each cookie. Remove from cookie sheets; cool completely. Makes 4 dozen cookies. |
