Gingered Bananas

Ingredients: 1 tsp. unsalted butter or margarine 2 tbsp. light brown sugar 1 tbsp. fresh ginger, chopped 4 ripe firm bananas, peeled, cut in half lengthwise, cut in half crosswise 2 cups vanilla frozen yogurt |
Instructions: Melt butter (or margarine) in a heavy nonstick skillet over medium heat. Stir in brown sugar until melted. Add ginger and cook 30 seconds, stirring constantly until ginger becomes fragrant and turns golden. Add banana pieces and cook 45 seconds per side or until light brown. Transfer bananas to a serving dish. Top with frozen yogurt and caramelized ginger. Makes 4 servings. |

this desert is out of this world! i decided to make it ahead of the holiday and i am glad i did because i think it may become a tradition, not only at the holidays but all winter long! i also added a touch of cinnamon to the top and each a few walnut pieces. thanks so much!
