Royal Icing-Made with Meringue Powder

Comments: Use this fluffy icing to pipe writing and decorations onto cookies and cakes and gingerbread houses. Meringue powder, which contains dried eggs and sugar and often some kind of food starch, is an essential ingredient for the icing. Look for it with cake decorating supplies in crafts stores or large supermarkets. |
Ingredients: 3 tablespoons meringue powder 1/3 cup warm water 1 16-ounce package powdered sugar, sifted (4-1/2 cups) 1 teaspoon vanilla extract 1/2 teaspoon cream of tartar Paste food coloring |
Instructions: In large bowl combine meringue powder and water; add powdered sugar, vanilla, and cream of tartar. Beat with an electric mixer on low speed until combined; beat on high speed for 7 to 10 minutes or until very stiff. Divide icing, and tint with paste food coloring as desired. Place in pastry bags that are fitted with decorating tips. Pipe icing onto cookies, cakes or gingerbread houses. When not using icing, keep it covered with clear plastic wrap to prevent it from drying out. Thin icing with water to use as a glaze. Makes 3 cups royal icing. Make-Ahead Tip: Cover icing with a damp cloth or white paper towel; cover tightly with plastic wrap or foil. Store in the refrigerator for up to 24 hours. |

I make what I call "fake" gingerbread houses. Graham cracker walls, roofs etc. I used your royal icing recipe to hold it all together and to decorate, it was perfect! Thanks so much! Deb

Hi! Diana, I am going to try out this recipe to ice my mini cupcakes this weekend. Due to the high humidity in my country I think royal icing would work best rather than a butter icing which will mostly likely melt by the time I get to my destination. I have a few questions in which I hope you can enlighten me, what is the purpose of the cream of tartar? May I add a few drops of Glyerine to your icing recipe to give a shine and a few drops of lemon to strengthen the icing? Thank you in advance for your answer.

Nobody is going to use this recipe if it doesn't have the ingredients and directions for the gingerbread house walls and roof etc., because you don't know how much of the icing to use for what size house. To improve, try including the whole recipe, not just the icing.
